SLAUGHTERAMA weekend in Richmond, VA

Belle Isle


One of the sickest events in RVA.
Bike events like:
chariot races (people stacked riding on bikes)
whiplash (two people with ropes attached to their bodies riding away from eachother)
jousting (riding bikes with poles with stuffed animals on the ends)
and one of the few times you can be drunk in public &
have open containers without getting arrested.
Definitely a unique experience.

sick days are the worst. no time for exploring.

but i have made these amazing mock-tuna melts.

1 cup TVP (textured vegetable protein)
1/2 cup mayo (can be vegan)
2/3 cup celery, cut thin
1/2 cup red onion, diced
2 tablespoons soy sauce
1/4 cup dill relish or diced pickles
1 tablespoon mustard
2 tablespoons apple cider vinegar
2 garlic cloves, minced
salt and pepper to taste

reconstitute the TVP - add 7/8 cup boiling water to 1 cup TVP. Stir and Wait 10 minutes.
in the meantime cut up celery, red onion, pickles, and garlic. Set aside.
when TVP is ready, mix all ingrediants.
Spoon mock tuna salad onto untoasted english muffins.
Add a few slices of medium cheddar cheese.
Toast in oven (i toast mine at 350 degrees for about 10 minutes) until cheese is melted.
yummm - enjoy :)

makes enough for 6-8 (english muffin halves) tuna melts!
